This type of steel has increased hardness (HRC60), which helps it to retain a sharp edge for longer and enhances the level of stain resistance. In this set, you’ll receive a 13cm Petty (Prep) Knife and a 18cm Santoku Knife. It is a pleasure to use this knife, thanks to the incredible mid-knife balance that allows you to slice and dice with precision.
